Chef Rodrigo Pacheco, a prominent Ecuadorian chef, was born in Quito. He is renowned for his dedication to sustainable and biodiversity-focused gastronomy. Educated at prestigious culinary institutions like the Paul Bocuse Institute and the Alain Ducasse Formation, Pacheco honed his skills in several Michelin-starred European restaurants, including those led by Pierre Gagnaire and Michel Bras.
In 2020, Pacheco was appointed as a Goodwill Ambassador for the International Year of Plant Health by the Food and Agriculture Organization (FAO), where he advocates for plant health and ecosystem restoration. His work emphasizes the crucial role of chefs in fostering a sustainable relationship with the environment.

In November 2018, the Netflix series, “The Final Table” premiered, in which he participated with excellence along with his partner Charles Michel. This global culinary competition has been one of the pinnacles of his career as a cook. The pressure exerted by an event of this type was remarkable, but once again, Rodrigo and Charles reached one of the highest places.


BBVA and El Celler de Can Roca launched ‘Sowing the Future’, an initiative to raise awareness about the relationship between food and environmental well-being. Rodrigo Pacheco, along with other international chefs linked to sustainable gastronomy, was part of the presentation ceremony and the development of the documentary video released in 2021. Joan Roca and Rodrigo Pacheco developed a 4-handed kitchen at the Foresta Restaurant, located in Quito, to celebrate the expansion of the largest Biodiverse Edible Forest in the world, an environmental conservation mechanism catalyzed by sustainable and biodiverse gastronomy.
